Ingredients
- 2 tbps Canola Oil
- 1 medium Onion
- 3 cloves of Garlic, minced
- 1 medium Red Bell Pepper
- 1lb. Ground Pork
- 1/4 cup Fish Sauce
- 2 Bay Leaves
- 2 Pork Bouillion
- 3 cups of Water
- 3 Yellow Potatoes, diced small
Instructions
- Heat oil in a pot over medium heat
- Saute onions, garlic, and bell pepper until soft and wilted
- Add ground pork and cook until lightly browned for about 5 minutes, crumble and stir frequently
- Season with the fish sauce, bay leave and pork bouillion, and water.
- Bring pot to a boil then lower heat and let simmer add the diced potatoes and let simmer for 10 minutes or until potatoes are tender
- Serve over rice
Notes
* To Make Ahead: Prepare through all steps. Allow to cool and store in the fridge until ready to eat. Store rice in a seperate container.
*To Reheat: Place picadillo in a pot on the stove and simmer until warmed through. Miicrowave rice in a microwave safe containe with a splash of water and a lid to allow rice to steam and not dry out.
