Filipino Picadillo

Filipino Picadillo

Ingredients

  • 2 tbps Canola Oil
  • 1 medium Onion
  • 3 cloves of Garlic, minced
  • 1 medium Red Bell Pepper
  • 1lb. Ground Pork 
  • 1/4 cup Fish Sauce
  • 2 Bay Leaves
  • 2 Pork Bouillion
  • 3 cups of Water
  • 3 Yellow Potatoes, diced small

Instructions

  1. Heat oil in a pot over medium heat
  2. Saute onions, garlic, and bell pepper until soft and wilted
  3. Add ground pork and cook until lightly browned for about 5 minutes, crumble and stir frequently
  4. Season with the fish sauce, bay leave and pork bouillion, and water.
  5. Bring pot to a boil then lower heat and let simmer add the diced potatoes and let simmer for 10 minutes or until potatoes are tender
  6. Serve over rice

Notes

* To Make Ahead: Prepare through all steps. Allow to cool and store in the fridge until ready to eat. Store rice in a seperate container.

*To Reheat: Place picadillo in a pot on the stove and simmer until warmed through. Miicrowave rice in a microwave safe containe with a splash of water and a lid to allow rice to steam and not dry out.
