Ingredients
- 4 overly ripe bananas
- 1/4 cup canola oil
- 1/4 cup honey
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/8 tsp ground nutmeg
- 1/8 ground cloves
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350˚F
- Spray an 8x5 bread pan with cooking oil (or line 10-12 muffin tins)
- In a bowl add the peeled ripe bananas and mash, leaving some chunks of banana for texture
- Add the oil, honey, vanilla and eggs. Stir to combine
- Add the spices, mix well to evenly distribute
- Fold in the flour, baking soda and salt, mix just until combined.
- Pour batter into prepared bread pan or muffin tins
- Bake bread for 40 minutes, check doneness by inserting a toothpick in the middle when removed it should come out clean, if it does not return to the oven in 5 minute intervals until cooked all the way through
- Allow the bread to cook in the pan for 10 minutes, once cooled turn upside down to remove, slice and serve with soft butter
